Coconut Macaroons

What you need:

  • 4 egg whites
  • 2 1/2 cups sweetened (or unsweetened) dried coconut
  • 1/4 cup matzo meal
  • 2 oz semi-sweet chocolate (melted)

While walking through the grocery store I counted at least 12 different kinds of store bought macaroons for Passover.

Here is a great recipe for ones you can bake at home and impress your family and friends.

How to assemble:

  • Step 1: Warm egg whites and sugar in heavy sauce pan over medium heat - about 3 minutes. Egg whites should be just warm.
  • Step 2: Add coconut and matzo meal. Stirring constantly cook until mixture is dry and slightly sticking to the bottom. (NOTE: After many attempts, it is best when the mixture starts to actually brown a bit, but not burn).
  • Step 3: Shape coconut mixture into 1 1/2 inch mounds and place on parchment lined baking sheet. (NOTE: Mixture may be a bit warm to the touch but you want to do this quickly as it will stick to the bottom of the pot).  
  • Step 4: Bake 15 minutes in a preheated 350 degree oven. Watch mid way through and move trays if they are browning too quickly.
  • Step 5: Place on wire cooling rack and drizzle with melted chocolate. Cool until chocolate sets.

Yields about 30 cookies
