Easter Popcorn Bars

What you need for this recipe:

  • 28 full size marshmallows
  • 1/4 cup butter
  • 5 cups popped kettle corn
  • 1 cup mini Cadbury eggs or other candy (seasonal M&Ms)
  • Optional: Pastel coloured melting wafers or white chocolate, melted, to drizzle on top

This is a sweet Easter treat that everyone in your family will enjoy. This treat is a variation of rice crispy treats, but with popcorn.

Making this is easy, and we are sure they will fly off the plates or out of the Easter baskets for your children.

How to Assemble:

Step 1: Line a 9×13 baking dish with parchment paper or foil (if using foil, spray lightly with cooking spray). Set aside.

Step 2: Using a microwave safe bowl, heat the marshmallows and butter in the microwave for 30 second intervals to avoid burning. Stir until marshmallows are melted and smooth.

Step 3: Pour the melted mixture over the popcorn which should be in a large bowl. Using a spatula to mix until all the popcorn is fully coated in the marshmallow mixture. Gently fold in the Cadbury eggs and M&Ms.

Step 4: Press the popcorn mixture into the lined baking dish gently until level.

Let cool for at least 30 minutes (quick set in the refrigerator or freezer). Once the marshmallow has cooled and set, cut the bars into 9 squares.

If desired, melt the coloured melting wafers and white chocolate and drizzle over the bars before cutting and serving.
