Fruit Summer Rolls

What you will need:

  • Rice paper wrappers
  • Any fruit you have available: strawberries, mango, kiwi, cherries, grapes, melon.
  • You can think outside the box, with pomegranate seeds, or even using a small cookie cutter to create fun shapes that you can see through the rice paper.

Dipping sauce options:

  • Honey, lime juice and zest and a few drops of water.
  • Chocolate sauce for a decadent treat.
  • Greek yogurt or any stirred yogurt will work

Are you ever looking for an alternative way to serve fruit to your kids? While searching for lunch time ideas to share with our backyard community, we stumbled across this great fresh idea to enjoy fresh summer fruit.

How to assemble:

  • Slice fruit in manageable bite size pieces or thin julienne slices for fruits like mango, peaches, nectarines or melon.
  • Put rice paper wrappers one by one in warm water until soft and pliable. Remove from water and lay flat on board.
  • Assemble fruit in wrapper, fold and wrap like a burrito, ensuring that you are wrapping tightly as you go.
  • Cut in half and serve.

They are easy to store and carry with to any setting, picnic, school or at home.
