Roasted Pumpkin Seeds

INGREDIENTS:

  • 2 c. pumpkin seeds
  • 2 tbsp. melted butter
  • 2 tsp. kosher salt

Additional Recipe Options:

Garlic Parmesan

  • 2 tbsp. Extra virgin olive oil
  • 1/2 c. grated Parmesan cheese
  • 2 tsp. garlic powder
  • 1/4 tsp. salt

Ranch Pumpkin Seeds

  • 2 tbsp. butter, melted
  • 1 1/2 tbsp. ranch seasoning mix

Cinnamon Sugar Seeds

  • 2 tbsp. butter
  • 2 c. pumpkin seeds
  • 1 tsp. cinnamon
  • 2 tbsp. sugar

Pumpkins provide fun for all to carve and decorate, and the seeds are fun to eat and full of flavour and nutritional value.

DIRECTIONS:

  • Preheat oven to 350°
  • Line a baking sheet with parchment or grease with cooking spray.
  • Remove seeds from pumpkin and place in a colander. Rinse to get rid of any pulp, then pick away any stragglers.
  • Transfer seeds to paper towels and pat dry.
  • In a bowl, toss seeds with melted butter and salt.
  • Spread seeds on prepared baking sheet and bake, stirring occasionally, until seeds are golden, about 25 minutes.
