Fajita Fiesta

What you need:

  • Protein of your choice - chicken, beef, shrimp, tofu
  • Veggies of your choice - tri colour peppers, red or white onion, mushrooms, lettuce, avocado, tomatoes
  • Cheese - shredded chedder, mozzarella
  • Salsa
  • Sour cream
  • Soft tortilla wrappers

How to assemble:

  • Step 1: Start with preparing all your food for the food station. Your children can assist you with this. If they are old enough to use a knife they can slice up the veggies for the stir frying and get the filling prepared for the fajita bar. For the proteins an adult should handle the meat for sanitary reasons. Always ensure you have a clean work station to avoid cross contamination.
  • Step 2: While your children are preparing the table for set up, you can start to stir fry the meat and vegetables for the fajita bar.
  • Step 3: On a large serving platter, or large wooden board, set up bowls with all of the fillings for the meal - the salsa, pico de gallo, sour cream, sliced avocado, shredded lettuce, limed wedges, shredded cheese, warm tortilla shells.
  • Step 4: Set out the cooked protein, sauteed vegetables (mushrooms, peppers and onions) and let everyone start building their own fajitas.
