Fresh Watermelon Cupcakes

What you need:

  • 1/2 watermelon
  • whipped cream
  • blueberries
  • chocolate chips
  • cupcake liners

Did you know that August 3rd is National Watermelon Day? Well now you do. Today we have a fun, easy way to make mini cupcakes using a few simple ingredients.

How to assemble:

  • Step 1: slice the watermelon into rounds about 2cm thick.
  • Step 2: using a small circle cutter, you will cut out circles that will be used for the 'cupcake'. You will need two circle per cupcake so be sure you cut out even amounts of circles.

*NOTE: if you are making in advance, put cut circles in a sealed container and refrigerate until ready to serve.

  • Step 3: Line your serving platter with cupcake liners. To build each cupcake start by placing a circle of watermelon on the liner. Pipe a swirl of cream onto the watermelon and place a second slice of watermelon on top. Pipe another swirl of cream and decorate with blueberries, chocolate chips or topping of your choice.

Once you complete your cupcakes serve and enjoy.
